Vinification

Selective hand-picking and gentle pressing. Spontaneous fermentation in Demi-Muids (600 l) made of used oak. Aged for 12 months on fine lees, followed by 4–6 months in stainless steel. No bâtonnage for maximum clarity, tension, and terroir expression.
