Single Vineyard
Origin
The Bates Ranch Cabernet Sauvignon comes from a historic site in the southeast of the Santa Cruz Mountains, near Mount Madonna, close to Watsonville. The vines grow on steep, rocky slopes with shallow, gravelly soils at elevations of up to 1000 feet. Parts of the vineyard were planted as early as 1974. This site is known for structured, long-lasting wines with clear expression of their origin.
Vinification
The grapes were selectively hand-harvested and fermented as destemmed whole berries. The vinification is gentle and terroir-focused. Subsequently, the wine matured for approximately 22 months in French oak barrels, developing structure, depth, and complexity.
Aroma and Taste
On the nose, it reveals currant, dark berries, and balsamic notes, accompanied by floral hints and herbal spice. On the palate, the wine is complex and multilayered, with fine tannins and balanced freshness. The finish is long, elegant, and structured.
Food Pairings
Ideal with beef tenderloin, lamb, or game dishes. Also pairs well with aged hard cheese. Serve at 16–18 °C and ideally decanted.
