Origin:
The Stone White Sauvignon Blanc comes from the Slovenian side of Hochgrassnitzberg, a top site characterized by its seashell weathering limestone soils. These soils lend the wines a distinct salty minerality and an unmistakable, taut elegance. With this wine, the Walter Polz winery consciously ventures into new territory: The Stone White combines Styrian terroir typicality with traditional amphora fermentation methods, elevating Sauvignon Blanc to a dimension of its own.
Aging:
The grapes are gently processed and spontaneously fermented in amphorae. The wine then matures for one year on its full lees in the amphora, before resting for another year in stainless steel tanks on its fine lees. This two-stage process gives the Sauvignon a special balance of texture, clarity, and aromatic depth.
Aroma & Taste:
On the nose, the Stone White shows citrus notes, yellow fruits, and zests, accompanied by a fine herbal spice. On the palate, it presents itself as straightforward, taut, and mineral, with a subtle spice of white peppercorns and fresh herbs.
