Origin:

The Cuvée Thermidor is the flagship of the young Johannisberger Sekthaus, which since 2017 has stood for sparkling wines with origin, substance, and finesse, crafted with great precision and a clear philosophy. The Cuvée combines two of the noblest grape varieties of the classic Méthode Champenoise: 50% Chardonnay, 50% Pinot Noir, grown in selected vineyards in the Rheingau. The goal is a sparkling wine that focuses not on opulence, but on finesse, structure, and longevity, entirely in the spirit of French models, yet with Rhenish origin and character. The work consistently begins in the vineyard: organically farmed, selectively hand-picked, exclusively healthy, pure-toned grapes, carefully transported in small picking boxes.

Vinification:

The grapes were whole-bunch pressed particularly gently to avoid bitter notes and preserve the clarity of the base wines. The Chardonnay was fermented in stainless steel tanks, the Pinot Noir in pre-used 225-liter barriques, each with malolactic fermentation and extended yeast aging. After careful assemblage, the second fermentation took place in the bottle using the traditional method, followed by 36 months of lees aging, hand-riddled, and bottled without dosage, Brut Nature, with 0 g/L residual sugar, unfiltered and completely pure.

Aroma & Taste:

The Cuvée Thermidor shows a fine, persistent mousse and a delicate golden color with a slight coppery shimmer in the glass. The nose is precise and cool, with citrus fruit, white peach, and green pear, along with fine brioche notes, roasted hazelnuts, and a hint of chalk. On the palate, the sparkling wine is taut, linear, and deep, with saline minerality, elegant acidity, and a vibrant tension. The complexity develops subtly with air – no loud aromatics, but cool elegance, supported by texture and structure. The finish is very long, dry, clear, and powerful, with subtle roasted aromas and puristic freshness.

Particularities of the 2020 vintage in the Rheingau:

2020 was a very early and warm year, with ideal conditions for healthy, fully ripe grapes. Early flowering led to an correspondingly early harvest. Thanks to moderate temperatures in autumn and cool nights, the base wines were able to combine high ripeness with a clear acid structure. Chardonnay and Pinot Noir in particular showed themselves to be expressive, ripe, and full of tension.

It combines Burgundian structure with Rheingau origin, barrique charm with citrus freshness, dry and perfectly crafted.
