Origin:
Alex Saltaren Castro's "Edilia" Riesling is dedicated to his grandmother, who played a formative role in his childhood. The name also refers to Pachamama , the Mother Earth of the indigenous cultures of Latin America – a symbol of closeness to nature and respectful treatment of the environment. This philosophy guides Saltaren's work: minimally invasive winemaking with as little intervention as possible. The grapes come from the Rheingau's top location Mittelheimer St. Nikolaus , in the immediate vicinity of renowned parcels such as Kühn's "Schlehdorn."
Expansion:
The grapes were harvested by hand and pressed traditionally in a restored basket press . The wine then aged for 12 months on the full lees in 300-liter wooden barrels . This long aging process gives the Edilia added structure, depth, and complexity without losing its cool, clear style.
