Origin
The "Edilia" Riesling comes from the top-tier Mittelheimer St. Nikolaus vineyard in the Rheingau, directly on the Rhine. The calcareous loess and alluvial soils give the wine saline minerality, tension, and clear structure. The wine is a homage to Edilia, the grandmother of Alex Saltaren Castro, and stands for nature-friendly, biodiverse cultivation.
Winemaking
The grapes are partially destemmed and processed with short skin contact, then gently pressed in a basket press. Fermentation occurs spontaneously without temperature control, followed by 12 months of aging on full lees in 300-liter wooden barrels. The wine is bottled unfiltered and unfined in a low-intervention style.
Aroma and Taste
On the nose, it is cool and reserved with yellow fruit, apple must, lemon zest, and herbs. On the palate, it is precise, taut, and focused, with clear citrus fruit, lively acidity, and mineral grip. The finish is long, saline, and full of tension.
