Origin

The Monte Nostrum comes from the highest and coolest plots of the Kiedricher Berg, characterized by phyllite slate and immediate proximity to the forest. This unique cool-climate terroir provides crystalline precision, finesse, and tension.

Vinification

Selective hand-picking in several passes, spontaneous fermentation, and aging for 12–18 months in Doppelstückfässer (large traditional oak barrels). The result is structure, depth, and fine mellowness with maximum terroir expression.

Aroma and Taste

On the nose, citrus, white peach, and apple, alongside floral notes, herbs, and cool minerality. On the palate, tight, silky, and highly precise, with laser-like acidity and salty tension. The finish is long, elegant, and energetic.

Food Pairings

Ideal with turbot, scallops, or veal fillet. Also suitable for Asian cuisine or goat cheese.
