Behind Timo & Co is sommelier Timo Weisheidinger, known for years for his creative non-alcoholic beverage pairings in fine dining. His products are handcrafted in small batches, using only real ingredients and no added flavors, stabilizers, or preservatives. Timo sources his teas from selected partners in Schärding, and production takes place in Austria.
Aging/Production:
The base of the Sparkling Tea is an infusion of green tea and jasmine, finely balanced with elderflower, verjus, and chamomile. The interplay of aromas is complemented by subtly used hops, which provide structure. All ingredients come from carefully selected sources, some of them organic. After gentle processing, the beverage is carbonated, creating a fine, effervescent texture. Alcohol: 0.0%, Residual sugar: 5.3 g/l.
Aroma & Taste:
In the glass, the Sparkling Tea presents with a light golden color and delicate cloudiness. On the nose, white flowers, jasmine, and elderflower unfold, accompanied by peach, citrus zest, and subtle herbal notes. On the palate, it is lively, taut yet supple, carried by floral aromatics and a subtle tannin structure from the tea. The fine perlage and the salty freshness of the verjus provide tension and length.
Food Pairing:
