Behind Timo & Co is sommelier Timo Weisheidinger, who has been known for years for his creative alcohol-free beverage pairings in fine dining. The Sparkling Oolong & Chamomile is produced in small batches by hand, exclusively from real ingredients and without the addition of flavorings, stabilizers, or preservatives. Timo sources his teas from selected partners in Schärding, and production takes place in Austria.

Aging/Production:

The base is an organic Milky Oolong, complemented by green tea, jasmine, elderflower, and chamomile. Verjus adds natural freshness and a delicate acidity. After infusion, the beverage is carbonated and left to rest for a short time to create a harmonious balance between fruit, blossoms, and tea aromas.

Aroma & Taste:

In the glass, it shows a soft orange with natural cloudiness. The nose opens with ripe orange, dried blossoms, and elderflower, underpinned by subtle minerality. On the palate, the fine perlage, floral notes of chamomile and lavender, and a slight caramel spice of the oolong combine. Despite its density, the mouthfeel remains smooth, almost creamy, supported by precise acidity and elegant length.

Food Pairing:

This Sparkling Tea pairs excellently with roasted turbot with fennel, dishes with smoky aromas, fermented vegetables, or strong cheeses. It also unfolds its full versatility as an alcohol-free aperitif or with grilled peach and light meats.

Vintage Peculiarities:

Since only pure, organically grown teas and blossoms are used, the aroma profile varies slightly with the harvests of the respective vintages.
