Behind Timo & Co is Timo Weisheidinger, sommelier and creative mind behind alcohol-free beverage pairings in fine dining. Known from Restaurant Lukas in Schärding, he has developed a fascinating range of pairings over the years – from tea to vegetable essences to his own creations. His Sparkling Teas & Fruits are produced in small batches, handcrafted and uncompromisingly puristic. The ambition: to create alcohol-free beverages with the depth and complexity of a wine – honest, full of character, and emotional.

Aging/Production:

The base is quince juice (50%), complemented by verjus (22%) for structure and freshness. With rosemary, ginger, and cardamom, the juice is finely spiced, before the drink gets its elegant perlage from natural carbonation and is then pasteurized for shelf life. All ingredients are natural, without flavorings or preservatives.

Aroma & Taste:

In the glass, the Sparkling Quince shows a bright, clear yellow. The nose combines fresh pome fruit and quince with ethereal herbal spice. On the palate, a play between warm fruit, delicate sharpness, and cool spice unfolds, carried by vibrant acidity and fine perlage.
